Wheat, rye and respective flours, durum wheat and durum wheat semolina - Determination of the Falling Number according to Hagberg-Perten (ISO 3093:2004)
Acest standard descrie determinarea activitatii alfa-amilazice a cerealelor prin metoda indicelui de cadere, conform metodei Hagberg - Perten. Aceasta metoda se aplica pentru cereale, în special grâu si secara si fainuri provenite din acestea, grâu durum si faina grifica din acesta. Pentru domeniul de aplicare a acestui standard termenul "faina" include gris si boabe macinate (srot integral), pentru care se definesc dimensiunile particulelor.
